Is there one book that you would recommend that provides the best single source of information on the business of beer making, from ancient times to modern day, and that includes German style beers as well?

Hmmm...that is a tall order as I am you may have noticed not a big German lager fan but that, of course, is only from, say, the 1840s on. One thing you might do is get some editions from the Classic Beer Style Series published by Brewers Publications of Denver Colorado relating to German beers. They include sections on history as well as how the beers are made. I have three on German ale styles:<ul><li>German Wheat Beer by Eric Warner (1992)</li><li>Kölsch by Eric Warner and</li><li>Altbier (1998) by Horst D. Dornbusch (1998).</li></ul>They have othre books on German styles.
